Kakuni【Japanese Home Style Cooking】
Today, we will introduce you to the Kakuni cuisine!
Kakuni is a dish made by simmering a block of pork belly, egg, daikon radish, etc. in soy sauce or white broth.
Whether you live overseas or in Japan, this is one dish you should try making at least once!
Here’s the recipe I’m sharing with you!
He gives us so great food!
And almost all of them are very easy to cook!
So good, you should cook it!
Ingredients.
・pork belly block 600g
(You will need 1 liter of water and 1 teaspoon of salt to boil the pork belly.)
・boiled egg 4pcs.
・ginger 20g
・the broth left over after boiling something 200ml
・fresh water 200ml
・refined sake(Please use 0 salt for liquor.) 150ml
・soy sauce 3 tbsp
・soup made with white miso paste(white dashi) 4 tsp.
・sugar 5 tbsp
How to cook
1.Cut pork belly block into desired size (roughly 3-4 cm).
2.Add 1 teaspoon salt to boiling water and add pork belly block.
The green part of the green onion is wasted and can be added here to remove the smell.
3.Simmer over low-medium heat for 1 hour.
4.Boil eggs in boiling water for 10 minutes to make boiled eggs.
5.When the pork belly block is done cooking, take it out and reserve 200 ml of the boiling water.
The boiled water from this process is great as soup for ramen or other dishes!
6.Return the pork belly block to the pot and add 200 ml of boiling water, then add the boiled egg.
At this time, it is best to put the boiled egg at the bottom to allow the flavors to soak in easily.
7.Add 200 ml of water, 150 ml of sake, 3 tablespoons of soy sauce, 4 teaspoons of white dashi, 5 tablespoons of sugar, and 20 g of chopped ginger, simmer over low-medium heat for about an hour, and voila!
The photo above shows leeks outside of the recipe. I added them because I didn’t want to waste the green onions.
And it tastes great with some mustard on top!
It’ll take some time, but by all means give it a try!
